Looks like a lot of work. Would like to try them though.

Actually, it's pretty easy once you do it a couple of times. The hardest ones that I did were the beets. It's prepping that takes a while to do. Just have to make sure you get everything cut and ready before you begin - including sterilizing the jars (which is the most important thing to do in order not to get sick)Try it some time, I am loving it!
